Like all fats, coconut oil is a blend of fatty acids and contains an unusual blend of both short and medium-chain fatty acids. It is this unusual composition that may offer health benefits. Although coconut oil contains 92% saturated fat -- the highest amount of saturated fat in any fat source -- the saturated fat from coconut is mostly in the form of medium-chain triglycerides (MCTs), which are metabolized differently than other saturated fats.
